i think the white dot is supposed to look like a bulls-eye if fertile? those look like solid white to me...


and here's a question for the hatching experts: I'd decided yesterday to set some of my own flock's eggs in the incubator, and just got them started around 6pm last night -- but just now, i heard back from someone i was hoping to get some shipped eggs from -- so i've turned the incubator off & taken the eggs back out. question is, can i hang on to these eggs for a few days and then start them again, since they were only at incubation temps for ~12 hrs -- or should i just ditch these and start collecting new ones?

Incubate them! they stop developing and will start up again when added to the incubator again. I would not keep them more than 5 days before adding them to the incubator. They will hatch a bit earlier than the shipped ones, assuming the breed coming hatches normally at 21 days.

thanks, @ronott1 ! I'll save them for now, and will also collect some new ones, as i'm not sure yet when the shipped ones (more isbars, yay!) will arrive...

Long story on my Olive eggers.

I started with this Olive egger cock. My understanding is he was a Marans/EE cross. He was my serial flogger butthead, so he's no longer with us.





And pure Ameraucanas:




From that, hatched this hen. (and her black sister) Her eggs are a pale green, but she is a superb layer, so I wanted some of her daughters.


Put her with a blue barnevelder male:




And that's how I got those two pullets. They both lay a nice, olive egg.

I got my sous vide xmas present on Friday and we have been mad cooking.

I also got a copy of modernist cooking. I went to the store to get a billion types of meat to try. So far we have done flat iron (7 hrs soft as a filet but needed sauce) steak tips ( 60 min fajitas!) Hamburgers (these turned out the best) and poached eggs and hollandaise ( sauce was great need to fuss with the egg whites)
Tonight we are gone to try fried chicken and oysters. We bought a more reasonable blow torch for finishing things.

I have never made a successful hollandaise before! But we are gonna get fat with all these meals!.

The trick with hollandaise sauce it the fat content of the milk used. The higher the fat content, the harder is it to "break" the sauce(gets curdled). It is a great excuse to cook with Cream!

Have you made Bernaise sauce yet? It would have been wonderful on the Flat Iron steak as a sauce!
 
We have 3 layers! My husband found an egg this morning, my older daughter found one when we got home from church a bit ago, and she has just brought me a nice warm just-laid one! (Curry laid that one). So it looks like all of my "suspects" are "guilty"
