Calling all cooks...

Thanks for all your replies. I think the ceramic top sounds good.
Now, I have another question! How is the convection oven different from standard? Do you have to adjust all of your recipes cooking time?

I am getting ready to take my DD shopping, and will check back when I get home. I want to get my new oven as soon as I can-but wanted to know a little about all the "new" technology. I've been using the other for 20+ years, so am very fuzzy about these things!

Temp and times will remain the same. The convection oven will cook more evenly. If you own your house, its not hard to get the gas company to come out and run a gas line. They will just set a tank on the side of your house. And you will be so much happier!

I want one of the ones that heat and cool fast. I don't have a gas option so that is as close to it as I can get, but they are $$$$$$$$$$$$$$$$$$$$$$$$$$$$$$.

I've recently been stove shopping since mine is having some issues and it's old enough I don't want to sink anymore repair money into it. Anyway....I use cast iron to cook with 90% of the time and I was told that the only company that oks the use of cast iron on the ceramic tops is Whirlpool. If you use it on any other brand it voids your warrenty. The store that told me this sells several different brands that are more expensive so I don't think they were trying to point me towards Whirlpool to get more money out of me.

I personally don't cook, but I've heard mixed reviews on each type, coil vs flat top ones, so I think it may depend on style of cooking.

I have some friends parents who cook "normal" types of what I usually call "American" food and they absolutely love the flat top glass stoves. My mom's sisters, heard all the great news and when they redid their kitchen, they got a glass one too and replaced it out after a few months because they couldn't get it "red hot" to do stir fry and the "Asian" cooking they got accustomed to, and they scratched the top with some of the bigger cookware they have. They would have loved a gas stove but it was not an option where they lived.

I'm dreaming of an induction cooktop. My electric dinosaur is still going strong...a good thing I guess, I don't have the money for induction.
I have used an induction casting machine for casting nickel alloy (partial dentures) years ago and it's very efficient in terms of energy.
