I'm thinking about hatching some quail for hunting on the farm . Their tasty as well but I do like dove better . We had native bob whites but not any more. I have a a bator so might as well use it.
I can't say I've tried dove. We do raise the quail and hunt wild pheasants and grouse. The pheasants though have come to the point that we have to do a farm hunt with them.
I was looking at my pens this evening going "Wow, I'm going to be getting 50 eggs a week. What the heck am I going to do with 50 eggs? Oh right, incubate and process. Really the total turnaround is 8-10 weeks from the start of incubation, hatch and grow out to 6-8 weeks of age. We thought of doing bobwhites. My mother in law wants me to incubate some for her dogs but I don't want to wait the extra couple of months before I can process them. Bad enough I have to wait for the chickens to lay eggs!
