Can ducks eat amaranth and quinoa?

We will be raising ducks for the first time this spring. We were thinking about planting some amaranth or quinoa inside their run if it is safe for them to eat. Does anyone know? What suggestions are there for plants inside the run?

When we had access to some land, we grew and fed hull-less oats and that worked out very well. They ate the oats and the rest was straw for bedding.
