Can I store forage for winter?

Have you grown sprouts in winter? Alfalfa, wheat grass, lentils, mung bean, etc. Easy enough to find in bulk, although if you've got your own field, can you harvest the alfalfa seeds then grow them indoors?

Do you have clover weeds?

You could pick a few gallon size bags and freeze them.
They should keep just find in the freezer for a few months.
 
I was going to suggest sprouting or fodder... my birds LOVE it and approximately 7 day turn around time for beautiful grass right off my kitchen counter grown inside a plastic croissant container.

I do barley because it was said to be the easiest without mold or sprouting issues. But some sprout even sprout BOSS or corn for variety. Peas would be awesome.

It's actually kind of fun to do as well. :pop

Huh... my place doesn't go above 60 in winter... and I figured it slows my growth of most things. It's important to note... things are NOT always as they seem... according to studies of fodder... dry weight is what counts towards your energy needs and not water weight... Which is where the majority of weight increase comes from.

I do this for enrichment... not really to cut my feed bill or add green because I stay super green most the year. But I can give this as a treat and not worry too much about diminishing my overall nutrition.
