Henny layed her first normal egg of the week a couple of days ago! Did I mention that before the shell-less eggs, there was a huge one that was three times the others?!

Several of my pullets this year laid a number of soft/thin shells over 2-3 weeks, now they're cranking out gorgeous eggs almost everyday.
Rule of thumb, IMO, is that it can take up to a month or so for the new layers system to get all settled in.

The huge one was probably a double yolker, also common with new layers.She layed a solid egg, but it was white...Usually she lays brown eggs. Why is this?
A brown layer has a white base shell, the brown is created with a coating...sometimes the coater has a glitch.
Again, probably just a new layer glitch and it will work itself out in time. Even once they get laying good and consistent you will occasionally get a strange egg.
How long has she been laying?
