Chicken Stock and Fatty floater

I don't pressure can my stock but I do freeze it in old time freezer jars that I got from my grandmother. They are still going strong after all these years. I haven't bought stock from a store in years.
 
The crust was excellent. I actually made extra and put in the freezer for another day.
 
Thanks! I am going to give it a try! It has to be healthier than pig fat (lard) from pigs who never have seen grass or the light of day.
