Re: the rooster guy - once you're NPIP, the whole easy rooster thing stops abruptly. You can't take anybody else's roosters unless they're NPIP too (and most people who are NPIP are experienced enough to take care of their own rooster problem), and you get a lot more aware of disease.
The rooster guy is there to provide a service for those who can't or won't do it themselves. It's not like he's getting plump cornish x 8-week-olds; he's taking anything and everything, regardless of breed or age or anything else. There's no NPIP requirement, so he's potentially exposing his own birds to stuff. I would find it hard to believe that many end up feeding him or his family. It really is a favor to people, and it's not unreasonable that they pay a little for his gas and trouble.
We humanely euthanize our roosters with CO2 and feed them to our dogs, basically as soon as we can tell they're roosters (so 2-3 weeks old). The canister was $20. Every time we refill the CO2 canister it's $2, plus our gas to go get it refilled. That takes care of maybe 10 baby cockerels. If I were doing roosters for other people, I'd need to charge for it too.
