Just jumping in here without reading all the posts but going by the map Nifty shared with us, we should probably do this in Texas. It looks like most people on here are from the east coast or the west coast and hardly no one in the middle of the country. What's up with that?

What a great idea.

A few ideas:
The Texas State Fair is in Dallas 9/28-10/21/07. I believe their poultry show is 10/13.

The Ft. Worth Exposition & Livestock Show is 1/11-2/3/08. Their poultry show will probably be 1/19-1/20 if it follows last year's schedule.

These are far enough north to be fairly centrally located, plus you have DF/W airport in the middle...

Another option is the Texas Bluebonnet poultry show at Texas A&M in College Station, Texas. It is the second week-end in January.
