I think it's probably easiest when they're sexually mature...but with Chinese geese, you will probably be able to visually sex them prior to that point.

They are almost indescribably cute!!I’m not really sure why they are hatching so quickly after the external pip? Egg three was starting to zip when its foot flopped out and seemed to have gotten in the way of turning so I made the call to assist. the gosling may not actually have needed help, but since it was actively pushing against the cap, I figured I may as well.
Egg 2 seemed to have a very easy hatch. Gosling 2 was on its feet much faster than gosling 1 and was eating and drinking before 24hours was up. Gosling 1 at 24 hours was still very wobbly and uncoordinated.

LOL, I wouldn't look that "gift horse" (fast hatching after external pip) in the mouth.The waiting is often excruciating...as you know.
If the hatchling's foot came out first, I think you made the right call because it sounds like a malposition that probably would have required help. It really does vary from gosling to gosling - "each in its own time", right?
