Christmas Dinner for 1....

I'm cooking for one also. I went to Target this morning and got 2 stuffed chicken breasts (Cordon Bleu) and they were even marked down $2 off the regular price! Soooo I'm going to cook them both over a bed of yellow rice in the oven and call it Christmas dinner!!!!! Oh Yeah!
 
I wish you guys were closer. We have Stray Christmas. anybody with nothing else to do drops by we play cards and eat off paper plates. I only invite people that don't mind chickens in the basement and dogs running amok

I'll be alone the days after Christmas. This will be the first time in 2 years that dh will see our 2 little girls ages 9 and 4. This was what was agreed to in mediation, 2 day visits here in town and 4 overnights at his sisters with the grandparents...with the exception that there will be no smoking in the house (9 chain smokers), no excessive drinking (don't know how that's gonna work), they get to call me if they want to, I get to call them, and if things get bad he brings them home. Prayers needed for a successful visit.

That being said, I'll be without my girls and I'm gonna miss 'em something terrible.

But that gave me a thought about being able to eat things I like but they don't and being able to watch whatever tv I want and being able to nap and being able to sit down without being climbed on by wiggley kids but then again....the dogs and cats will probably do that and I'm still gonna miss em. It's like all thier winter break away from me and hardley anytime for us. I told them we'd go see the movie Tangled when they get back. They've never been to a movie theater yet.
 
Cornish game hen is my favorite. I always end my dinner for 1 with the most expensive ice cream I can find. As a matter of fact I think I'll have a bowl tonight just for you!
 
I would go for Duck in orange sauce - its lovely, or Pheasant in red wine and forest fruits.

My store doesn't carry em in a 2 pack. Just little itty bittys wrapped up all by thier lonesome. Their so cute.
 
Cornish hen is my vote. Im having chicken. I was gonna cook a whole chicken but didnt have all the ingredients I needed for Lemon Pepper Chicken. I cook the whole thing because I use the leftovers for noodles and casseroles. If my outdoor chickens only knew!! Ive been alone since 98. If you really want to count, probably more than that as my ex was a truck driver so I was alone alot anyway. First couple years I didnt decorate at all. But now I buy myself a present every year and put it under my artificial tree. Course, this year I ordered a Bushnell game cam and it wont be here til after the first.

I have done a small turkey and all the usual trimmings and bought a 10 pack of the leftovers freezer containers. Then I feast, serve up a dish to all the containers, put the bones in the soup pot and clean up. It's lots of work but then I'm done cooking for days, and have turkey dinners any time of the year I want them till I run out. I have even done that any old day of the year since I love turkey.

I have also some years when working just ate whatever, do what suits you! Hubby and I are both working so this year we did a big ham days ago and are eating the left overs all through this working block. I sliced the whole thing that day and made ham soup that night, oh yum, it's great. We still have turkey from the last one I put to the freezer as above so we could do turkey too if we wanted.
