Before the stupidity, BIL would jig for flounder at the port in the shallow water. Spot, stalk and drop a shad or mullet right on top of the flounder. He had access and the guards would let him in. He'd spend the afternoon after loading ships and come home with an ice chest full. Now, no one is allowed around the port. National security.

This is Lake Charles. And it has grown up a lot also with the casinos. Lots of people playing in the swamps now.
Yeah the most fun I've had was helping run wingnets at night in my teens. We caught all kinds of stuff. My hands were so cut up picking shrimp in the picking boxes then when we were finished I remember washing my hands in dr tischnors or however it was spelled and burning so bad. Thats all the old man would use to disinfect hands after a night of running nets

I tried to get invited to an alligator hunt. Seems the boat was full. I was told that it was a nasty job. Not as nasty as cleaning the things, though. Heard some good stories.

Shrimping is another hard job. I should go buy some fresh gulf shrimp and boil 'em. That'd be good for Friday. A big 'ol pot of boiled shrimp. With the secret dipping sauce.

Muddy - the shrimpers run the nets at night and bring the catch in for the morning. By lunch time, there is fresh gulf shrimp at the stores. The smell is great. Beats the clorox smell at the fresh-frozen mart. And you pick the count. They had 8 count shrimp the last time I was there. That's 8 shrimp to the pound in case anyone was wondering.

I also get a bucket of heads for the chickens. They love shrimp heads and crawfish heads. Turns the yolks deep orange for a month or so. I'll divide it and freeze it and give them a bit at a time otherwise it smells up the neighborhood.

I hunted alligator once once again I was a teen. Long story short it came alive in the back of a chevy chevette and my accomplice I mean friend wasn't thinking and raised the hatch and shot it again with the .22 not thinking the gas tank was just beneath it. Nothing happened but made for a good story. It was about 6' Long. Alligator tail meat is the best wings and rib meat I dont like its tough and stringy. I love making a good alligator piquante

crab boiled garlic is wonderful. course, so is everything else, but I'll burn my fingers grabbing the garlic. Good thing we got a cold beer ready for first aid. :lau

Copeland's opened in Lake Charles and the mashed red potatoes with skin were seasoned so well with crab boil that I wanted seconds. Seems everyone else at the table thought they were a little too spicy. They toned them down (didn't season at all) the next time I went back. I was disappointed.

Yeah so sweet tasting. I'll have me a barqs. I've never eaten at Copelands. Did used to go to al's house to see Christmas lights though lol. Cauliflower is really good too but I wait till everything is soaking to put one in or it'll just get all mushy if cooked during. Boiled eggs are good too but you gotta boil first then peel then soak. The crabboil doesn't go through the shell

Had most a rotisserie chicken that had to be used up so we made a quick jambalaya with it. Didn't have any tomato paste so no traditional red color. Got it resting to thicken up a bit
