Bielefelders might be a good option too. I like them because they're autosexing, I'm actually getting ready to put some in the incubator later this week. They're supposed to have a meatier breast, and be pretty tender.

Yeah, but that Dorking cockerel was 7 months (28 weeks) old. And still under 5lbs, and she says she's surprised at the lack of breast meat. That is not a glowing review to me, I can get the same if I grow out a Barred Rock cockerel that old. Unless you're wanting only to do slow-cooking roasters, you want something that's going to finish under 16 weeks. If you're open to other breeds besides the ones you listed, everyone says good Buckeyes are a very good meat bird, I would look that direction.
