I think we will start trimming the fat from around pork chops and from shoulder roasts and rendering it down to make our own pure lard. I like my eggs though fried in bacon grease that we save.

I need to start saving bacon grease. I usually cook bacon on paper towels in the microwave so there is no grease to pour off.

Good morning! Coffee is hot! It’s still dark eew I don’t like dark at 7:30am.

You'd think the roosters are trying to ring in the new year early. There is a constant crowing today. Non stop. I'm gonna to have to take my hearing aid out if I'm to get a nap today. One of the loudest roos is going off like a broken record. 4 or five more are answering him close by. I think my camp has been encircled by at least 20 right now.

I have about 20 in the holding pen. Need a sunny day and another pair of hands. With the power plucker we should get then all processed an in the fridge chilling while they get ready for freezer camp.
