Just yesterday I delivered a dozen eggs to my childhood neighbor. (Only 1 white egg in the carton.) She is stunned by the colors and says she's not going to eat them they are to beautiful. I told her she better eat them or my girls will be offended.
Haha
Sometime I hollow out an egg and keep the shell, because I can’t bring myself to eat it

I'm doing the same!
I use a large syringe and needle to blow out the eggs. The needle is sharp enough to cut through the shell. Then I shake the egg with the needle still inside to try and break everything up. I can then use the syringe to blow into the egg instead of popping an eye out of its socket.
Sometimes I can do it with just one hole by filling the egg with air and pulling the needle out. The pressure pushes the egg insides right back out the same hole. But I've also popped them doing that. LOL They actually make a 'POOOT!"
