I lost track of how long it took mine to finally get done. It was more than 1 hour 10 minutes but beyond that, I'm not sure. As others have said, it turned out well, though next time I make it, I'll probably add more sugar to it.Yes, the knife test should work on this like it does on a cake. Mine does always gel up but there was one time I had to keep putting it back in over and over again and it took closer to an hour and a half. I'm trying to remember what I figured out the issue was. I know it had to do with the water. Either I had used a different quantity of water or the oven temp was different. In any case, the temp wasn't sufficient to heat the water sufficiently to cook the custard - I know that was the end result. If you start with very cold water or a very high level, you will need to adjust the cook time accordingly as it is the oven heating the water to the right temp that ultimately cooks the custard to perfection, if that makes sense.

I spent the morning deep-cleaning the kitchen. I've been so sore and laid up for so long (from a car accident I was in back in January while 10 weeks pregnant... turns out whiplash and pregnancy are a wicked combination). This whole house has gotten to be a really big mess. It has really started bothering me. SO, now that I am slowly starting to feel better, I've been trying to slowly clean up different parts of the house and KEEP them that way. Keeping them clean is the hard part with 2 kids and a hubby, especially since I've been spending so much time on PT and doctor visits. However, I am trying. It is still frustrating to be sore still and to be so far behind still but I am doing my best to make due. This accident sure has given me a fresh understanding of what those with chronic pain go through. The only difference is that I still have the hope of getting better. I feel so bad for those that live with pain day in and day out.
