Lizzy, I have a wonderful recipe for duck. In fact I was thinking of cooking one just for my DIL this weekend. (She loves duck!) I have the skin on on my ducks and cook them with it. Before I serve them I remove all the skin. I think the fat in the skin helps keep it moist but then you don't want too much when you are done.
Preheat oven to 500 degrees
Mix
1Tbs kosher salt
1/2 tsp ground cumin
1 tsp black pepper
Sprinkle duck inside and out with spice mixture
Quarter half an orange and put it in the duck cavity with a sprinkle of thyme, marjoram and a couple wedges of onion.
Place the duck on a baking rack with 1/2 inch of water. Bake until skin turns golden brown. (about 30 minutes)
(If you don't have an baking rack you can raise the duck on more onion slices, carrots or celery.)
Reduce temperature to 325 and continue roasting until a thermometer inserted in the thigh registers 170 degrees. About an hour to an hour and a half. Let duck stand 10-15 minutes before carving.
I don't use a thermometer. I just bake it until it is done looking.
Also....hope your in laws are enjoying their new grandson and you are getting a little break!!!
I had to laugh at my DH last night. He said, "Do all chickens poop that much?" (referring to the white orp) He does have a point. I am going through a ton of paper towels.
I've been looking at on line adds this morning and can't say I'm impressed with anything I've seen. The only thing I was interested in was sold out on line.
Dinner was so-so last night. I got busy and didn't get the pie out of the oven soon enough so the crust was kind of dark. Instead of saving the leftovers of the chicken and dressing I am cooking up some broth from them to go on the dogs' food tonight. They deserve a treat now and then for all the protection they give. I did fill up on potatoes and gravy cause I rarely make them any more and I love them. Comfort food at it's best!!!
I've got to do some cooking today for a family thing tomorrow. I'm really not looking forward to it.

Danz, that sounds good, I may have to try that recipe next time I cook one of the ducks in my freezer. We really like duck, so I wish I had more in the freezer to eat, but I'll take what I can get. Maybe next year these in the pen will raise some extra drakes for me so I can have some more.

That wind is kind of cold out there today, I had to go out & put away the straw that was delivered this morning so it's under shelter. I put it in the main coop run up against the north wall so it will help block the wind more & keep it fairly dry too. I had to get it put away before I let the goats out today or they would have been into it before I could get anything done with it. They don't care if it's straw or hay, they'll eat it anyway. They have been enjoying eating the dried leaves all over the ground, they like them & I have been told they're good for them. I still want to rake up some more for my pens, but I have some other things to get done first. The chickens really have a good time digging through the leaves, it gives them some entertainment for awhile.

I took Coco my new kitty outside again today & she tried to hide under my arm again. I went out & took her out under the trees & sat on the overturned stock tank with her for a few minutes & all of the other cats came & stood around to see what I had. She tried to make herself as small as she could for awhile. She did settle down a bit before I took her back in. She seemed relieved when she got back into the garage & into her safe place. My DH thinks I have spoiled her keeping her in such a cozy, safe spot.

We did go out to Walmart last night for the Black Friday sale & got all of the stocking stuffer things for the girls & my son plus a couple things for the new grandson coming in two & a half months now. We got some really good deals & it wasn't honestly as bad as last year. My DH went with me this year, I have been before so I knew what to expect, but he was a little overwhelmed. He kind of manned the cart while I walked end to end of the store looking for the things on my list. I managed to actually get everything on the list & we got a couple more things he wanted while we were there. We were kind of wondering if it was a little less crowded than it had been last year due to it being on Thanksgiving day. The parking lot was still pretty full, but you were able to manage to get through the aisles at least without a cart. Some places were more congested than others. The aggravating thing this year was they made people line up for the movies & video games so there was a huge line for that & they only let a few people in there at a time. I waited because I wasn't going to stand in that huge line for an hour so when we were totally done otherwise we went over & got in a line half the size it had been or less. We actually did manage to find a couple of Wii games for the girls, so I was happy with that. Last year we bought the Wii game system for them & they have been wanting some new games for it.

Well I'd better get back out there & get busy. I hope everyone had a great Thanksgiving & have a good day today!
 
Happy belated Thanksgiving everyone! It was a busy day for us. DH deep fried a turkey that I had injected cajun sauce with. Then I cooked some scalloped potatoes with cheese for the kids. We also had sweet potato with apple slices and brown sugar. We don't normally celebrate Thanksgiving but this is the first year we are in this house so we cooked up a Thanksgiving meal. Everything turned out fabulously.

DH went to Wal Mart last night to get a can of polyurethane for the old house kitchen because the new tenants are signing the lease agreement today of all days! So we have been running around all day today to get everything wrapped up, last minute cleaning before the tenants move in, etc. I'm happy that the house is rented out. The property tax is due next month so I'm glad we have some income to help pay for it. I did go to Menards around noon today but walked out with just the items I needed. People were dashing around there like everything was free! I have no desire to do doorbuster nor am I interested in fighting for sale items in the store. I just don't like to shop.

I saw by Wednesday/ Thursday that its supposed to get cold again :/ I went and bought some plastic wrap today. I plan on just covering the 2 ft or so of the run, hopefully that will help keep them warmer?
 
I wanted to share a few photos of my sick chicken Kick...She has been inside for 2 days now, her eye is completely opened up now but still has some swelling. Her nose had some dried stuff on it tonight, but I am also putting VetRX on it a few times a day.

Here she was 2 days ago, her eye was completely swollen shut


Here she is tonight, she is eating well, poop looks good (smelly, but good, it must get smellier as they get older) her comb does not look real pink, but so far she seems to be doing much better.

Anything else I should do at this point? how long should she stay inside seperate? I am getting some Tylan 50 its ordered.
 
She looks a LOT better; I'm glad to see it. Sorry, but I can't help you with your questions.

I can't even being in a crowd like that. I would honestly never get any shopping done because crowds make me physically sick. I would feel lucky to have a bathroom stall all to myself!!!

I think I'll wait and see what else comes up on line later. I have no shopping list this year really and am kind of flying by the seat of my pants. Money is tight and I honestly have no clue what to get any one. I didn't even want to go to the local town to pick up a couple groceries yesterday so I stayed home and just used what I had on hand to cook with.

She is looking great. Keep her separate until she is no longer showing any signs of illness. The problem with these viruses is the infectious period can last different lengths of time. I think you are doing the right thing. The tylan will clear any secondary infections that resulted from the virus. Patience is worth it as opposed to loosing your whole flock if they got infected.

I can't do crowds either. I don't even like going out the weekend after Thanksgiving just because of all the people, it stresses me out. I had to go to Sams club on Wednesday and it was a mad house, I couldn't get out of there fast enough!!

Hope everyone had a good turkey day. We cooked a turkey yesterday and I burnt my hand on the roasting rack, brilliant!! Its a lot worse than I thought it was too, I have a huge blister. Other than that our bird and all the trimmings came out delicious and we have tons of leftovers, my favorite!!! Amelia had a grand time playing and smashing all her food, she cracks me up with the mess she makes. The only trouble is when she pitches something off the high chair and the dog snatches it and she wasn't done with it!
 
Forgot to ask a question! I am going to list a bunch of ganders for sale but if they don't sell we are contemplating having them butchered.

I know we can't do it, I thought DH was going to cry the other night when I told him I was thinking about it. It is really hard because they are such sweet creatures but they are already starting to pick on each other and it isn't even breeding season yet. I don't like them fighting and can't afford them injuring each other. One of the older boys was limping the other day after a squabble and he is a valuable bird. If anyone knows of somewhere that would process a small group of geese let me know. I hate to drop them off somewhere too but I just don't think I have the guts to do it myself.

That describes me exactly. I hate crowds enough that anything I got at a Black Friday sale wouldn't be worth it, no matter how cheap it was. I did go out there once just to see what all the fuss was about, but apparently Black Friday shopping is a skill like any other and I sure didn't know how to do it. You have to line up for items that only go on sale at a certain time so I don't know how people end up with carts full of savings since it seemed like for all the real deals you had to spend half the day standing a line.

Oh, that is sad. Have you checked with Whitewater Processing and Walnut Valley Packing? I don't think either of them does birds but it doesn't hurt to ask.
 
Crowds while shopping don't bother me that much other than the aggravation of getting where you need to be to get what you came for. People were actually pretty good this year as compared to last year. Walmart got smarter & improved things this year by not wrapping everything on Black Friday sales in plastic wrap & they put up location balloons to help you find what you were looking for. Last year was ridiculous because with the plastic wrap had to be cut on every pallet when it was time & then people had to fight to get in there to get things. This year it was much calmer & things were easier to get to, I guess they learned their lesson. I think with having the sales on Thanksgiving day as well it did cut down on the sheer number of people, although there still was a crowd for our small town. We normally aren't in town on that day because we usually go to Missouri, but not this year. I have gone Black Friday shopping down there too if I was there. The major stores usually will have most of the popular items online before the store sale, but you have to know when the online sale starts to get them. But don't worry too much if you missed something you wanted because this year there are sales all weekend & Cyber Monday is coming with big sales online, so Danz you can shop then & maybe find what you missed out on. We often have a big item we're getting for ourselves for Christmas that we look for on Black Friday, but we didn't this year. One year we bought a big screen TV & got a good deal on it. Another year I went & stood in line at 4 a.m. to buy a laptop for one of the girls. I don't know if that was worth it or not.

ash, I'm glad your little bird is getting better, hopefully the Tylan will knock it out the rest of the way.

I just saw this on CL for sale in Wichita, the ad says it's 12 ft tall!
