If I have fresh tomatoes I like making Ratatouille and subbing the eggplant with extra zucchini and fresh green beans.

Frogen-nog?! Egg-cellent! Snagging this idea forrr-surreeee.....I stock up on quart bottles of Eggnog over the winter. Stored in the freezer (better yet, frozen in an ice cube tray and stored in a sealed container) it makes an amazing coffee creamer ... even in iced coffee!
Hmmm, I do have a vanilla vegan powder I like to have for breakfast. Yeah, no whey stuff here either, kiddo is deathly allergic. We do almond milk but I found my shake is just as good with water.
I accidentally grabbed the chocolate kind once and find I don't like it (though I do like chocolate in general) so maybe that one would be good mixed with coffee since I like mocha lattes. Thanks for the idea!
Smoothies.....I lurv something with pineapples, strawberries, and peaches in it or to make my healthy sorbets in the ice cream maker. Plus I make an awsome dairy free vanilla custard ice cream. Yum!!
I remember the latter recipe and I think I asked about why you were using ginger.I'm nortorious for being a mixologist for non-alcoholic drinks & shakes.
One think I learned about 6-7yrs ago from a gal on a cooking channel show (know her face, forgot her name) she showed a great mix for yogurt.
Equal parts ricotta cheese & yogurt (I like to use Greek mostly) and I usually put frozen blueberries in it too. Mix it at night and by morning to stir it once more and the blueberries juice tints it all purple.
Sometimes I use the "multi-berry" mixed frozen bag. Or on a rare occasion, the pitted Frozen cherries!
So this premixed yogurt yummy gets tossed in the Vitamix with any or all other available fruits.... Pure in a container for freezing in small portions. Then I'll take this frozen cube as ~1/3 of a protein shake for my lunch or late breakfast back when I would drop off kiddos and then head to my 1st client.
This premix is also great in the GF pancake/waffle mix too. The kiddos also take part in making these.
Some times I take my "jollyjuice" & add it to a protein shake.....
That name is courtesy of one of our local USPS office staff ladies who is a wonderful sweet soul.
It's a squeezed lemon (with pulp)
~1 heeping tsp turmeric
~1 heeping tbsp of cut/ground ginger
Honey (to taste)
Pour super hot water over it in a tall mug, let steep. (My mug is round about 20-24oz)
Sometimes of late I'll add a little cranberry juice concentrate or a Knudsen juice.
These as well have had varying degrees of joy for the kiddos as well.

Back before the SHTF I went to a local upscale grocery store and scored some beautiful organic ginger hands (roots) because I had decided to grow some in pots so I would always have it around (anti inflammatory) and the plantlets are now maybe 3 feet high? I LOVE the smell of fresh cut ginger, but now I can use it fresh, frozen, or dried anytime I want some.
Greek Yogurt- love this stuff too. I actually used to make my own yogurt, but with kiddo's allergy now I can only indulge if I can eat it right from the container or shake it up in a marked jar I use for my smoothies. My fav basic breakfast smoothie is fresh mashed fruit, a cup of almond milk, and a cup of greek yogurt. Yum!!
I wish I could cook with yogurt and cheeses like I used to, but I still indulge now and then in safe ways.
Some time back I did a green smoothie 10 day cleanse. Can't say I always loved everything that went into the green smoothies because it was primarily leafy greens instead of fruits, but by day 10 I felt awesome.
