Oh, trust me...I'd love to not pay 5 times as much for GF flours...but kiddo has soooooo many allergies, some used to be fruits and veggies, and most foods are already limited so I have to utilize bready items. I do, however, bake in a much healthier fashion ...like I incorporate things such as sweet potato, pumpkin, zucchini, bananas, etc...and I use coconut oil. I'd love to use nut flours, but kiddo is allergic to nuts.
That said, I am glad my kiddo knows, and can pronounce all the vegetables one could grow in a garden and is happy to dig potatoes.
If tradional flours make you tired you could be reacting to the gluten. Many gluten free items are made with rice flours and you (general you) won't feel tired, sluggish, bloaty, or have an upset digestive system after consuming.
