Unsure what tomato this is, but there’s about 50 on this one plant

Both tomatoes look to be Romas. They come in several oblong-y to pear-y shapes.

Romas are my fav too. When I get extras and don't feel like canning or making tomato leather, I'll cut out the stem core then toss into freezer bags and freeze for when the weather is cooler and I don't mind a hot kitchen. Romas also make decent sun dried tomatoes for adding dried to dishes for color and flavor.
 
And anyone know what plant has prickly’s everywhere including on the fruit that’s growing? It’s green looks like a cucumber.
Haven't grown them in quite a few years, but that sounds like a possible cucumber. Are the leaves smaller than the zucchini leaves? Maybe a little wrinkly too?

Yes. So I guess I mixed up the cucumber and zucchini maybe or the wrong seeds were in the package because my zucchini seeds are not even open 😂

You can search for DIY ways to make both, but I have a food dehydrator and use it to make and preserve all kinds of stuff. Mine's old but very reliable and I dry herbs, every veggie you can think of, like kale for using in the off season, and yes...zucchini too. 🤭

Tomato leather is the same as an apple roll up. Basically any veggie or fruit that can be cooked down and pureed can make a leather or fruit. Tomato leather is actually very tasty. And I'm like you...not a huge fan of just fresh sliced tomatoes because I prefer my tomatoes cooked, but I will chew on tomato leather. It's also great to put into a pot of water and simmer until melted to make tomato sauce.

I used to have a very small house and dried foods only need a quarter of the storage than canned foods do, so part of my drying started out of necessity.
