I love egg salad too! Man, I miss egg salad being on the school meal plan (even if they made it I wouldn't trust it.)

Haha! I still teach at the university so I hear ya. Growing up I thought boiled eggs were disgusting. But now I am a total convert. Homemade egg bites are also delish with home raised eggs.

I actually don't mind Statistics. I'm taking a stats class right now.
Not that I'd take it by choice, haha.

I might make some more egg salad soon. My slicers work great lol and I got some medium brown eggs on Monday* and idk what to do with them cause I realized I don’t really like eggs any other way anymore. I used to love fried egg sandwiches or scrambled eggs or omelettes or steak and eggs or steak peppers and onions but those are all MEH for me now LOL IDK why. Plus I can never cook an omelette right ever.

So I figure I’ll just make egg salad again lol

I did make tuna salad too a couple times recently. That’s easy, canned tuna, mayo, salt, pepper, and I put sweet relish in mine and sometimes craisins but I didn’t use craisins this time. Craisins are really good in chicken salad though LOL I just bought some on Monday “Cape Cod style” with craisins and walnuts LOL I think it had celery too.

Anyways, might make egg salad. IDK yet LOL
