Gambel's have a red top, California Valley have a blue/black top. both are hands off and flighty. They are offshoots of the same branch, cousins if you will. Both can tolerate the heat and cold well.
Edited to add: If you never have had quail before, these are not beginner type birds. I wish you luck on whatever your choice.

Because both are the prey birds, not birds of prey, and frankly live wildly in the same habitats. That usually means that they will get along fine together in a backyard.
