Dixie Chicks

When I was in boot camp, Ft Leonard Wood Missouri it was so hot and humid! Got sunburned the second I got off the plane, it rained huge raindrops with no clouds in the sky!...

Weird though, don't ever remember seeing any flies, not a single housefly or ever a mosquito.
They had poisonous brown recluse spiders and rattle snakes everywhere though.....

I was @ Ft Lost in the Woods in winter well from Oct on ,fire drills in 2 feet of snow now we're having fun LOL

JEM!!!!! :hugs Good to hear from ya, hon! Good looking bama/Brahma mix boy ya got there too... :) I'm still kinda interested in the DC, but if you're only hanging on to him cuz of me, don't worry... you gotta do what you gotta do... and got my hands full with all the new additions this fall, lol... :D ;)

Blackbeards Pickles
1/2 peck cucumbers
8 medium-size sweet onions- Vidalia
1/2 cup of kosher salt - no chemicals added.
ICE cubes
1qt Vinegar, Dr Braggs Apple Cider With the mother maybe a quart maybe more.
3 Tablespoons of Mustard seeds.
1 Tablespoon of Turmeric
1 Tablespoon of Celery Seeds
2 Tablespoons of peppercorns (3 per jar)
1 Teaspoon of cloves(1per jar)
1teaspoon of red pepper flakes( a few flakes)
8 Cups of white pure cane Sugar
One garlic clove diced into teeny tiny pieces (pieces)

Thinly Slice Sweet onions
Slice & spear cut cucumbers
Pack cucumbers and onions in a glass bowl in kitchen sink with salt and cubed, chopped or crushed ice, cover with a plate and a towel over the plate till ice melts. About 6 hours. Grandma took 4 hours. She did not have air conditioning.
Drain,
Pack onions into the bottom of the jars.
Pack spear cut, sliced and/or diced cucmbers in the jars.
3 peppercorns & one clove in every jar.
A few flakes of red chilli pepper flakes in each jar.

Bring to ALMOST a boil BUT do NOT boil.
1 qt of your vinegar, Sugar, Mustard, Tumeric, Celery
Then laddle into jars over cucumbers.
Put lids on jars lightly
Put jars in canner.
Bring water up to 2/3 of outside jars and bring to a boil and turn off heat and tighten lids and leave to cool and when it cools it will suck the lid on and the top will sink inwards and THAT is sealed. When cooled with dry and store on shelf or Refrigerate because your going to eat them. Refrigerate before opening to eat and refrierate after opening.
If I told you, it is difficult to write and not get it all there and I dont want to leave anything out because that would reflect on me.
The more sugar the crisper the cucumber slice. Always soak in Kosher salt and ice to draw out the water from the cucumber sothe cucumber will soak up the vinegar, sugar and spices. Always put sweet onion and the clove and peppercorns and flakes in the bottom of jar before packing cucumbers and then laddle hot liquid And then can it. You will not believe the difference if you change the order or leave something out.

I must write knit and crochet patterns down that are in my head. Like wedding ring and pinecone.
I must write down every recipe that is in my head on paper before I start loosing or forgetting something. Like mammas pie crust or her pralin pecans. Grandmas cured beef roll she used cheese cloth not intestines. Intestines were used for Sausages.
