Dixie Chicks

after the pool and laps and hot tub.. I think it is going to be Operation break broody hens broodiness..I need to formulate a plan lol and I need to figure out if the girls are using the new feeder yet or not....think I should maybe not fill up the old feeder see how the new one is being used or would that not encourage them to seek out the other feeder?

Big buns too... I should have made the dough a bit looser though, these had a nice texture, but could have been a bit fluffier. A slightly looser dough and letting them rise in a slightly warmer temperature would have made them better.

Bye for now jem, and everyone, off to work. I get a new phone and the job I'm on this week I'll have no time to even look at it. This Sat though...Last Sat I was so bored without the phone. All I had to do was sit at a desk and watch a HMI screen and temperatures and pressures. I think I had to push a couple buttons. Luckly I found a book in my car and read half of it.

One thing my mother says is that North American flour requires more water then European when baking! Don't ask me why but she learned the hard way... I'll have to keep that in mind..
.
My fatherinlaw is a baker, he only uses high gluten flour for his breads. Many fifty pound bags every week and gets fresh every week . His mixer you could fit a person in. He bakes wholesale in a wood fired brick oven he built at his house.

If it helps, Finnish water is very soft. My bread recipes are not something to take after yet though, I bake bread very seldom, and am not that skilled at it yet. My bread is often a bit too dense. The no knead bread made in a cast iron pot is really nice though.

our well water is terrible, even arsenic in it. We buy water for cooking and drinking. It's distilled water, in Germany my mom would use that kind of water in her iron only, here we drink it!

Might have to buy some wheat flour, pastry flour probably won't make a difference?
