drives me insane how words aren't spelled the way you are supposed to say them

I agree about the bayou. But we spell and say it creek here. Sometimes when we sleep wrong we get a crick in our neck. We fish with crickets in the creek
 
We use creek in plural form as in the creeks are full, crick in singular, the crick down back is full of trout, yup redneck hillbilly's.
Shag bark hickory and apple is my favorite smoker wood.
Bama the peckerwood is the full length tree logs about six inches round that don't need splitting. (Wonder if I'll get a PM from bigbrother?) Don't know why we call the skinny logs that but that's what I've always heard them called. My last load was mostly big knarly knotty logs, had to flip the splitter up vertical cause I couldn't pick them up at 24". First yr I had a splitter. I used to cut them 32-36" and split by hand.

Buddy of mine and his brother got a log lot on a ski resort that had never been cut, virgin timber. It was mostly hemlock, and some nice big hard wood. The resort paid them $100 a tree to cut them down, and whatever they could get for the logs. They couldn't even sell half of them and still made $100,000 that summer off them. They showed me a pic of them standing by the butt end of one of the hemlock logs, it towered over them, must have been ten foot or more on the stump, lumber mills can't handle them that big.
 
When I lived in Georgia, there were a lot of words said differently.

Georgia Ohio

crick creek
clicker remote controller
coke pop
y'all you all
you'ens you guys


I know there are 1,000s more. When I 1st moved there, had a hard time understanding some of the thicker accents. When I came back home (Ohio), I had picked up part of the accent and my family would laugh and joke about it

Words I would use to describe bodies of moving water: Spring, creak, stream, river. If it's human built, canal, or more rarely, channel. For irrigation purposes, a ditch. That's what I can think of from the top of my head.
