How much can we really pick and choose chicken characteristics by breeding?
Say I want a blue shank, white plumage, v-comb, speckled egg, meat bird, as a hypothetical example. There must be resources out there to learn how to breed for specific genes, anyone have any they can recommend?

I would instead find the breeds with the traits you like first. I wouldn't limit yourself to superficial things. You might find out just letting them mix that your view will change with the results.

You can do that by picking birds with the traits you want and breeding them together then advancing the offspring with desirable traits. Pay attention to what are recessive so you can get them again or breed them out.

There's alot of chickens with traits you can combine.
Like this example for the traits you're looking for: White Polish, White Bresse, Welsummer.

Only things that would have to be bred out is Crest, Red Leakage, & Recessive Yellow Shank genes with that combination.

Another combination would be: White Polish, White Bresse, Rhode Island White.

This would result in breeding out Crest, & Recessive Yellow Shank Trait.
