Drooling Rooster??

So it was time to do the early prep for Sunday's dinner.

We caught a rooster and hung him from a slip knot in preparation for slaughter.

He started drooling onto the ground. Not really a whole lot, but enough for us to take pause, maybe a tablespoon or 2 worth of it.

Any idea what caused this? Is the meat safe to eat?

Curious...
 
I would imagine this was caused by hanging him upside down. He may have had extra fluid building up; I'm sure you know they get CHF readily.

I would process and, if he looked and smelled OK, eat him.

All 17 of the roos I butchered drooled like that. It was like a food/water mixture from their crop.
