Runny eggs benny
Mmmmm me too. I went and had a massage this morning and I was so embarrassed that my tummy was growling. One of my favorite little diners out here has a crab benny for brunch. I don't think I have ever had anything any better. Crab cake, poached runny egg, bacon, gouda cheese, bacon on a homemade english muffin. Perfection
 
I am not talking about rubbery texture, I am talking about rubbery tasting FLAVOR.. I cooked them just like chicken eggs, over easy with a runny yoke, solid white,.. I am wondering about using them for baking, but if they taste like rubber I don't want the baking tasting like rubber, Does any one else ever experience rubbery tasting duck eggs or were my ducks just plain weird?? or did they just eat too many garden slugs?? cause they really cleaned up the slugs in the garden, that is for sure..Any more thoughts??
I have heard people complain of a fishy taste but not rubbery. Most of those who have the fishy tasting eggs, have their ducks on a pond with lots of snails. So, slugs could be your issue. It could also be your feed?!
 
I usually simply rinse all the poop off the eggs with running water nothing else..
but flavor wise, maybe I have a sensitive taste buds..I don't like goat milk either and a lot of people rave about it,, To me goat milk tastes like awful tasting strong flavored twangy yogurt.. I love the sweet jersey creamy milk, and I even ditched one good producing cow who had "off flavored milk" as a nurse cow,, didn't like the flavor of her milk..with some milk cows if their protein /fat ratio gets "flipped" ( usually cows have a higher fat to protein ratio) I don't like the flavor, and can tell if the cow has a "cheese" genetics ( they like high protein for making cheese) or normal fat higher than protein genetics... I am wondering if the ducks eating all the bugs had anything to do with the flavor issue...With goats when they eat weird things ( which they do all the time) it flavors the milk horrible.. Does anyone think eating a ton of bugs had anything to do with the flavor???
