Duck Egg Quiche Lorraine

1 pie crust eased into a quiche plate.

Fry 1/2 pound bacon until crisp. Crumble and sprinkle over crust.
Top with about 4 ounces of shredded cheddar (or swiss) cheese.

Beat 2 duck eggs with 2 cups of milk, 1 tsp salt a dash of pepper and a dash of cayenne. Pour gently into plate.

Bake at 400 degrees until top is lightly browned and center is set but slightly soft, about 25 to 30 minutes.

worse part is I am the only one who actually likes it.
best way I have to get my fix is to bake them in the large muffin tins.
after cooling I pop the left overs into the freezer.
 
Mmm! We made omelettes the other night with asparagus and duck eggs. They were fabulous!
