Our household prefers duck eggs over chicken eggs!!!!
They are especially good boiled, or in omelets or in pancakes, or .....well, you get the drift.
For supper fluffy cakes or pancakes...you separate the yolk from egg whites and beat the whites and add them last to the mix. You'll never want to go back. Goose eggs used in this fashion are even better. I know several people who are bakers by trade---They were all shocked when I told them I knew their secret to such fluffy cakes! I was right- goose eggs!
OH....I have runner ducks (they lay more eggs than chickens/year). Their eggs are large and seem almost see through- although they are thick. Mine are white, but I've heard some runners lay blue eggs.
