Got my first duck egg last week and one every day since. Didn't collect yesterday and there were 5 today! Have 2 female Pekins 6-l/2 months old and 2 Rouena 5-l/2 months old. They've been laying them right at the water's edge (muddy, yuck) so laid some straw under the park bench by the pond and they've started laying there. Have a nice little shelter for winter made from straw bales but have only found one egg so far in there. Anyone have special recipes that they use duck eggs for rather than chicken eggs?

Duck eggs do not have a strong flavor & are quite good. They are better in bread recipies then chicken eggs. The cakes will rise better. Enjoy.

Only made an orange pound cake so far that called for 5 duck eggs. If I was to substitiute duck for chicken eggs in a recipe should I use one duck egg for 2 large chicken eggs? That looks right to me.
