Somebody better roll me away.

Friday night is pizza night!

I usually make the dough the night before and put it in the fridge. I use

1 1/3 c water
2 T olive oil
4 c flour
1 t salt
1-2 t yeast

Put in the bread machine, adjust flour or water as needed. Refrigerate 24 hours, or more. Take out 2 hours before needed. It's enough for 2 pizzas (I have 2 kids).

My DH loves his pizza slathered in meat - pepperoni, sausage, bacon, hamburger, salami, capicola, ham, or any combination of those, maybe some onions and olives.

I like mine meat free. Feta, spinach and sun dried tomatoes. Or fresh mozzarella, basil and sliced tomatoes during the summer.

I use a bread machine pizza dough recipe that is so good! I just throw everything in the machine a couple hours before I'm ready to fix dinner, then it does all the mixing, kneading and proofing for me. Take it out and hand-toss it onto my pizza stone that has a bit of corn meal sprinkled over it, top it with sauce, veggies and cheese, then 12 to 15 minutes later dinner is ready!

The recipe I use:
Bread Machine Pizza Dough

Ingredients

1 1/8 c warm water
1/4 c olive oil
1 - 2 tsp salt
1 Tbsp sugar
3 1/4 c flour (1/2 white and 1/2 wheat works great)
2 tsp yeast

Instructions

Place in bread machine in this order so the yeast is separate from the water at first. Run this on your dough cycle. When done, stretch or roll into pizza dough shape, cover and let stand a few minutes (10 to 15). Top with sauce and your favorite toppings, bake at 450 degrees for 15 minutes or until edges are browned and cheese is melted.

I find it is even better if you can let it stand for 5 to 10 minutes after coming out of the oven. It seems to tighten everything up in the center.

Yup! I let mine sit for 10-15 minutes to settle and cool before cutting. In the case if DH's heart attack special it helps to solidify the grease.

I've been wondering on other toppings. I love my veggie pizza's ... but the doc told me if I gotta eat meat I should do some rabbit. Anybody tried that on a pizza
