easy, yummy boiled custard

yummy custard!

1 tsp vanilla
2 cups scalded milk
3 eggs
4 TBS sugar

get water for the bottom of your double boiler going, put milk on to scald. i beat the eggs with an old fashioned egg beater until light yellow and foamy. add the sugar and beat again. temper the eggs with adding a stream of hot milk stirring constantly. add the rest of the hot milk, stirring constantly. put in top of double boiler and heat, stirring constantly until it thickens and coats the spoon. (if you over- cook it will "curdle" the egg whites, still edible but not as smooth a custard, and besides it separates a little) remove from heat. let cool and add vanilla. super yummy and easy, would be fantastic over bread pudding or chocolate cake '
