Eating the rooster's

For older birds I soak in meat tenderizing salt for a few hours to overnight. Dissolve the salt in about a cup of warm water then fill the pot with cool water. If I'm soaking overnight I put ice in to keep from spoiling
 
I would brine them overnight, then cook covered in broth in a pressure cooker if you have one available. If not, I would cover in broth in a shallow casserole in the oven at 200 degrees until they're done. Then shred and season and maybe stick in a Crockpot on low until dinner time. Might still be a bit chewy.
 
We processed our extra cockerels this past weekend - one is slated for chicken and dumplings as well!

I may have to make some fajitas with one as well. These boys were only 15 weeks old, so they'll still be nice and tender. I'm sure tho with the right marinade and cooking the meat slowly, an older bird would work just as good. I picked up two packages of tortillas yesterday at the store..they had a bin of them for .25 per package. Thanks for giving me an idea what to do with some of them!

I was told that Chicken Fajita's are pretty popular over in Texas, so I was wanting to try them out using the extra cockerels.

Processes when they just start crowing they are tender. Older roosters are tough as leather, 20mins in a pressure cooker makes them tender. You can do the same thing in your crockpot just takes a lot longer. Just keep a eye on it and it's done when the meat easily pulls off the bone.

My brother bought me this recipe book as a joke, but there is actually pretty good recipes and ways to tenderize tough old birds.

Did I miss why it can't be an electric pressure cooker? I recently bought an instant pot. I swear that thing is magic! Highly recommended.
