economic crunch and layoffs

I'll have to count how many times I actually boil it when I make it (poke sallet) up in the spring. I was taught to boil it until the water you pour off of the "greens" is no longer green.

I cook the poke sallet greens up in bacon grease, with chopped up bacon and then scramble in a few eggs...yummy!!!

Now I'm hungry and wishing even more that it's closer to spring!

P.S. Skip was laid-off just before Thanksgiving. He's able to draw unemployment but it's not even half of what he was bringing home every week. We've tightened our belts another notch and turned the heat down. Going through my seeds to get a late winter/early spring garden going here. He's been out looking for work but there's just no one hiring right now in this area.

Dont feel bad Dawn419. I have a wife and 4 children, oldest is 18. I have been out of work since June. Drawing unemployment, but thatrune out mid Jan. I am a truck driver. Been local for years. I would take anything right now, trucking compaies are hiring, but there drivers are sitting for 2-3 days a week bringin in 200-400 aweek before taxes and that doesnt take out what they spend on the road in truck stops tryin to get by. I can and do work heavy equipment and am lookin to try that field in a month. Good luck to all.

This whole situation with the economy is my first time experiencing a recession, if you dont count me being born during the Carter administration.
Luckily my girlfriend and I were raised to be self reliant.
We farm, not garden in our backyard. We have enough corn and blackeye peas to have cornbread and peas all winter long. And we buy our fatback from a farmer locally. Cuts costs and we survive.
We are both in our mid twenties and we both take responsibility for our house hold. If we cant afford it, we dont go to the 'rents to ask for money. We save. It is really sad to see so many people my age still riding on the coattails of their parents. Isnt it every kids' dream out of high school to move out and be independent ? Now it seems to be independent and but of course have a hand in their parents wallet.
Im sorry for ranting but I know how the past generations look down upon my generation and shake their heads, and the worst part I shake my head too.

Survivor man lacks common sense, If we were to sit and watch a show together I could show you all the thing's that he does wrong, and the many thing's that he can do to improve his stay in the wilderness, For instance, instead of eating a grub. Pick up a stick , sharpen it, and spear some dinner, trust me, I would not want to be lost in the wood's with that guy... But hey if eating insects for seven days in the woods get's you good Television rating , I say have at it. But generally i don't recommend taking his, or that other nutcase in "Man Vs Wild"'s advise because truly they have no buisness, in teaching wilderness survival skills, There are some great book's out there that are much more suitable teaching aids Such as:http://www.amazon.com/Primitive-Wilderness-Living-Survival-Skills/dp/0967877776 I have this book, and i Highly recommend it.to anyone interested in some basic survival/wilderness living skills.

AMEN!!! I watch these guys and think"thats why so many city people that get lost in the wild die, because they follow advice they see on these shows" you do not float down a river when its cold to get down the mountain faster, you do not run as fast as you can down hill in the dark to get away from a grizzly when you had a perfectly good fire going(it was proabably a coon anyway),and you never find "wild" horses running around with shoes on,like one show I watched..

I have to apologise to you and many of the other young people here, and I hope it will be accepted.

I am fully aware that many young people have tremendous skills, and I also know it is wrong to make great generalisations on people. I have been through this myself, lol.... I did not get to be 55 in a charmed life.

Sometimes, the focus is on the young but they are not alone in this, and I think when we first started discussing this we were only expressing our fears for young people who have never experienced this situation before.

That, maybe for some it will be difficult, the young people that have joined in here could certainly put me to shame, and I live in a very tame environment, if ever I had to really rough it I would prefer to have some of you around in the community to lead the way.

I have lived in my street for over 20 years and there are several people who are in real trouble, they have extended their houses, they live on benefits, and houses are not holding their value.

Since I have been home and ill, I have had a regular visitor, my next door neighbour, she has lived on benefits for a long time, she has 3 children, and is very ill. She had brain surgery that has left her with severe problems, but she is the kindest soul around. She is always around if I need any help, she comes to check on me, and she loves my chickens, I send eggs around to her as a thank you.

She is only in her 30s, and her family are shunned by lots of others in the street, she rents her home, and she rides around on her bike. but she is the best person around. She comes to me to learn about cooking and household stuff, and she chats every day over the hedge, I would be lost without her sunny smile and her friendship.

So just so you all know we are not knocking young people just concerned for some of you just as there are some real fools that get to be mature and learn very little. But they don't keep chickens....lol...

So good to se you all join in

Jena.
