I'm also a low carber...I was diagnosed Diabetic in July...I still cook all my normal food but I if it's something I can't eat I just keep some hamburger patties on hand and fry up a couple and keep a bag of salad in the frig with some homemade dressing.

angelfoodministries.com has really helped our family out for groceries. I make my shopping list and menu from what I get in my $30 box. The quality of the food is wonderful. If you haven't looked into angel foods you really should take a look.

I've also cooked alot of recipes off of Hillbilly Housewife. I love that site. The donut muffins are wonderful. The kids love the oatmeal muffins and the pasta italiano is unbelievable!!! I haven't made something off of her site that isn't just wonderful. And most of the ingredients are already in my pantry!

I went low carb to keep my head from exploding (high blood pressure and a family history of stroke, heart disease, type 2, alzheimers, sheessh. My parents should have never let me near a carb!!!)

Tator Tot Casserole
Brown 2 lbs hamburger with chopped onion. Add 1 can cream of mushroom and one can cream of celery or chicken, heat through and season to taste. pour into a greased casserole dish or 9x13. Stick tator tots halfway into casserole all over. bake at around 350 until tator tots brown top with cheese and cook until melted.

Oatmeal Pie (great substitute for pecan pie)
2 eggs, slightly beaten
2/3 cup melted butter
2/3 cup white corn syrup
1 tablespoon brown sugar
2/3 cup oatmeal
1 teaspoon vanilla
1 (9-inch) unbaked pie crust

In a medium bowl, combine eggs, butter, corn syrup, brown sugar, oatmeal, and vanilla; mix well. Pour into unbaked pie crust. Bake at 350 degrees for 45 minutes, or until firm. Serve topped with vanilla ice cream or whipped topping.
