We got beef tongues in the freezer. I kept meaning to figure out how to cook it, and today I looked up recipes and realized that anywhere you can use a brisket you can use tongue. Braised, slow-cooked, smoked, or barbecued are the most popular I've seen. Going to try barbecue tongue and lengua (tongue tacos) with the two I have.
I made beef stock with ours:D

Braised, slow-cooked, smoked, or barbecued are the most popular I've seen. Going to try barbecue tongue and lengua (tongue tacos) with the two I have.
You can boil the tongue for an hour or two.
Then skin it and slice if up into smallish pieces.
Simmer it in a little water with some garlic, bell pepper and onion and a little cumin.
Let the water cook down/out then serve it on tacos.
 
Today is now the official dedicated as MYSTERY MEAT DAY. Today I found a package in my freezer from our Farm Yield. It is not labeled. I wonder what it could be. What cut of meat, size and portions.
It is like a Christmas Gift from my processor!

Wednesday is no longer hump day. It is now Mystery Meat Day.

"No."
"Was it laying in the grass?"
"Uh, no."
"Well, what happened?"
"I put it on the floor after assembling it, then got up to plug in the battery charger. :hide "

Belly too full.. weak.. fading fast..

Mystery Meat was Berkshire/Old Spot Pork Steaks.
3 pack and cut 3/4' thick.

Beautiful coloring and marble. Hub seasoned only with fresh black pepper corn & coarse sea salt.
Seared over oak and hickory hardwood.

I made mashed potatoes and baked pinto beans.
The pork almost tasted like red meat. Our feeder swine get top quality feed and alfalfa. Finished with corn and beer.
The meat is to die for..
Best mystery Meat meal in awhile..:thsleepy..
