Well, mine kind of varies a bit. I was mostly 99-100, but when my incubator heats up, it then cools down to 98 before heating back up again.It's possible. What did you run for temp?

I had Mexican style on the pacific coast of MX in Jalisco. It's more of a seafood cocktail and that was with octopus and shrimp as well.
This is more like pico de gallo made with raw fish.

You can probably find the ingredients in LA to make it yourself. The fish only needs to marinade for about 6 hours. You can do anywhere from 4 to 18 hours. Do you have a place to get sushi grade fish/shellfish?
I meant to ask you if the place in Cozumel you snorkeled was the park just a couple miles south of San Miguel. San Miguel is the main town where the cruise ships dock. I got a super cheap B&B in the middle of town. We rented mopeds and circled the island a few times. After the cruise ships leave, the town takes on a whole new feel.
We also rented a house with its own reef north of town in the hotel zone.
