EE or what breed is this hen?

She's probably a mix. Perhaps one parent was an EE, but that is no guarantee the eggs will be blue since EEs can carry the brown laying gene.

Some of my hatchery Brahmas have light legs similar to yours (also supposed to be yellow), but I hear ya. Where did you get her?

Yes, certainly not a Brahma. If you read through, you'll see that was my example of how hatchery birds can have different colored legs than the breed standard.

Based on where OP got Mabel and what appears to be slate-ish coloring on her legs, I think I'd x2 what @humblehillsfarm says.

When you say "Here chic, chic, chic" does she come running for treats?

All my chickens follow me around the yard like puppies for treats lol but she has always been a little skittish. Doesn’t like being picked up or even touched much at all.

Looks like a light sussex mix. She isn’t barred. You can tell because her tail feathers don’t have any bars.
