egg recipes for people who don't like eggs? :)

So far we have been doing great eating all of the whites, and probably half of the yolks, and feeding the remaining (cooked) yolks (and shells) to our finches and back to the chickens. It is working out well. I plan to make spaghetti carbonara sometime though! It looks good.

I don't think food banks and homeless shelters here would take eggs from us.

There is always a race for the leftovers on the Carbonara around here,where leftovers are usually not a fave amongst the children, there are a few but not many. Did you ask any church or local food pantries? The one in my town will take anything you bring and they always say thank you to all the extra produce. Usually sell all my eggs but they have taken some when I was back logged. Have you tried selling any?

SilkieChicken~ the Jersey Giant I got from you *loves* hard boiled eggs. She will snatch it and run away from the other hens. They steal the egg from each other over and over until it's gone.
 
I have started making homemade pasta out of my eggs.

3 cups AP flour
3 eggs
1/2 cup of warm water

Mix together using a fork. Knead and then Let it rest for 30 minutes-4hours. Roll out and cut into needed shapes.

This takes quite a bit of arm work but if you start making pasta often you can invest in a pasta roller.
 
I made noodles a couple of times last week by hand, and just got the kitchenaid pasta maker attachment yesterday! I can't wait to use it.

I made this tonight, it was very dense, but good, didn't taste egg like at all. Sort of french toast like. My son liked it a lot.

This made me think of German Apple Pancakes. I make this fairly regular. We like it with maple syrup, and for a special treat - I mix blueberries with the maple syrup to put on it.

Melt 1 to 1 1/2 tablespoons of butter in a non-stick pan. Slice and sautee 2- 3 apples in butter. Adding cinnamon sugar to it when they are almost done - to taste since ever variety of apple needs a different ammount of sugar. I like the apples slightly firm.
Mix up your standard pancake recipe - only add two extra eggs, so three eggs instead of one. Pour over the apples, being careful to cover all of the apples, and cook on the stovetop over medium heat until the bubbles come up through the batter and the edges start to dry.
Stick in a 350 degree oven for about 10 minutes, until brown the top.
Flip out onto a plate - I always need to scrape some of the apples out of the pan and onto the top of the pancake.
Slice and eat as is or drizzle with syrup.

It is also good if you add fresh blueberries into the apples right before you pour on the pancake batter.
