In my opinion, too low is worse. Although shrink-wrap does not happen often, it can. That is why we raise the humidity at lockdown, to avoid shrink wrap. I know you see a lot of posts on here where there is no need to worry about shrink wrap, but every reputable manufacturer of incubators tells you to up the humidity to avoid it.

I've had the humidity spike from 65% to 85% when chicks start hatching and introduce a lot of moisture into the incubator. I haven't noticed any problems. The chicks can be slower to dry off but they will if I give them time. I've seen where people say you can drown them with that high of humidity. Just because I haven't noticed that doesn't mean it can't happen but I'll take my chances compared to too low. I have seen shrink wrap.
