Eggs still won't peel

OP, are you talking about the eggstractor that has the bellows that goes over the egg and pops it out of the bottom of the little platform? those things *totally* work, every time. there's a little technique to getting it right, but once you get the feel of it, they never never miss.

the method causes air to flow into the egg and between the shell and the egg itself, freeing the egg, which then slides out the bottom. perfect every time.

poke a hole in the eggshell on the air-bubble end (has to pierce the shell and the membrane). crackle the shell on the opposite end (about the side of a quarter) by popping it on a hard surface or rolling it back and forth just a tiny bit. only want the quarter-sized area crackled. put it on the little stand crackled side down over the opening. bellows goes on over the top. place both hands on the top of the bellows and with a sharp, quick, firm action press downward with both hands as quick as you can. kinda like CPR. the air inside the bellows pressurizes, flows into the eggshell, separates the egg from the shell, and blows the egg out the bottom, intact. usually the shells are intact too - a 3/4 shell in the bellows, a perfect peeled egg underneath!

boil the eggs with vinegar, when hardboiled, drain the pot, roll the eggs around in the pot to crack the shell, if you can handle it, crack shells with your hands, THEN Add ice cold water and let sit, but keep adding ice water!!! Wail until the eggs are completely cold, the shell!!!!

I have been having the same problem until last night. Did all this with my 8 fresh eggs from this morning picking and a dozen from a week or so ago, didn't matter, them both shelled great and the white stayed intact.

I hope this helps, I know it did for me, and I made perfect deviled eggs last night!!!

After googling how to boil an egg, I found there are some differences in how LONG to boil them. However I did learn that over cooking them creates that green ring on the yolk. Not good. BUT when I boil eggs I do as this person says and dump ice over the top to crack the eggs. Kinda like you would if you took a hot or cold plate and stuck it in hot or cold water.

Can't say about fresh eggs but I say we all give this person's advice a try.

I have to share this: when I first saw the title, here's what I read it as. "Eggs still won't pee!"

Seems like you got lots of good advice for peeling, though. I just wait until the eggs are about a week old, but those other methods might work for you.
 
I never have a problem with mine, I steam same day eggs. I use a timer and I start a pot of hot water on a rapid boil, before I put the basket on. After the basket is on I then start the timer for 15 mins. after they have been in there for 15 mins. I put them in a pot of cold water for five mins. I think tap them on each end until the crack, i roll them on the counter with just enough pressure to crush a shell a bit more and then I start at one of the ends and start to peel them making sure that I get that membrane off the egg and then it comes off cleanily. I also peel them under a light so I can see. I also put my yolks into a ziplock bag and smoosh them up and then add my relish, grey pompon mustard ( coarse ground ) pepper and mayo last so its not too runny. smoosh it really good and then cut the corner off and then "pipe" it into the eggs. I like to keep my deviled egg mixture firmer , so it stands up.

I boil eggs right out of the hens. Make sure they are at room temp, and then boil the water first, then add the eggs. I don't add salt or vinegar. After they're done (I set a timer for 15 min and the pan is covered) plunge them directly into ice water immediately and I add more ice after a couple of minutes. Leave them in the ice water for 5 minutes, then put in the fridge. Even my peeling-challenged dh has no trouble peeling them with no egg white stuck to the shells.
