It's a bit difficult since there's a lot of extra math involved.
Because you're calculating on an off day (Day 2 or 6 in a week rather than a solid 7 Days) you need to take the daily weight loss and multiply it by the number of days since the last weighing. So for a 58 day incubation you'll take the daily weight loss and multiply it by 2 and subtract the result from the last weighing (In this case: (Day 56) - Daily Weight Loss X 2 = ?).
That's the easy part, the hard part is getting the right percentage once you have that odd day set up. I honestly haven't found a good way to correct for this, math really isn't my strong suit so I just manually tweak the multiplier until it comes out at the right percentage.
I noticed on the 49 Day incubation chart I accidentally put the percentage formula backwards when I changed it from 53 days to 49 days so here's an updated version, I deleted the old one so there's no confusion about which one to download:

And a long incubation chart, this one has three entries ready to go, one at 53 days, one at 55 and one at 58 so you can pick which one you want to use, the 'hatch days' are highlighted yellow:

To edit the multiplier just click on one of the projected numbers under February 26th and you'll see something like '=C4*0.8697', C4 is the location of the number on the sheet the formula uses and the number is the multiplier. 15% as a decimal 0.85, 12% is 0.88 and 13.5% is 0.865.
