Skittish is normal. Many roos are naturally skittish. Aggressive roos that attack should become immediate volunteers for freezer camp and never bred.
Orpingtons generally are well behaved chickens. I have found the english orps more so. My roo in my picture is a sweetheart. Doesn't generally like to be held or petted, but comes looking for treats every time i walk in the pasture. If I need to catch him, I can easily and he holds still. I did handle him a little every day, but not excessively. Moderation is the key. And no, i dont give treats everytime I walk out there, hes just hoping i do.
Either way, i think hes going to grow up to be gorgeous.
