He could just have a mixed flock, with all the different breeds mating with each other, and then he just sells the chick based on the color of egg they hatched from. Being an animal breeder myself, it's hard to tell how an animal will turn out when they are only several days old.
If that were the case they should be sold as such....barnyard mix, mixes breeds, etc.
It is not difficult at all for a good breeder to predict what an animal will turn out as, at least within reason of general physical traits of the breed, or at least which breed is which, but a backyard breeder or one allowing mating willy-nilly between animals, sure. I would think, as a "breeder" yourself, you would understand the difference

It is terrible that people will do that, hopefully you didn't pay too much for them. Unless you have your heart set on the breeds, raise them & learn. Once they start laying, you probably wouldn't care less what their breed is. It's so exciting. You could always put them on CraigsList or post an ad at your feed store IF you choose to try again.

He showed me the “parents” they were all in their own coops! A pair per coop, so I’m not sure what the heck happened!

I will most likely keep them. I get somewhat attached to them. When I lost my last 4 I was heartbroken! I will just have to talk my husband into getting a few more;)
 
Chicken Math :lau Sorry to hear you lost your last 4. Hopefully your coop/run is big enough.
It says it can hold 14, but I think that is too cramped for them. Got it from tractor supply last year. (Yes I know I paid too much, but it keeps them safe, as long as I remember to close it up :()
