Finally found a Wheat Bread I love!

Miss Jayne's has 1/3 cup sugar, so maybe one of the honey's should be sugar. Not sure if the 2nd butter is maybe used over the top of the bread before baking or after it comes out of the oven to brush the top with that 2T of melted butter, would be my guess!

here are the instructions for the original recipe

DIRECTIONS
In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.

Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour.

Place in a greased bowl, turning once to coat the surface of the dough.

Cover with a dishtowel. Let rise in a warm place until doubled.

Punch down, and divide into 3 loaves.

Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.

Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake.

Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely


There is where the 2 butters come in.

I have been using this Simple Whole Wheat Bread Recipe that catray44 posted. For years! I add all the honey. I love this recipe and actually add more whole wheat and lessen the white bread flour. One of the nice things about bread recipes is that you can experiment with the ingredients and come out with a product that suits you. One of the best things about this particular recipe is that it makes 3 loafs. 1 to eat, 1 for the freezer and one to share. I love giving people a loaf of home made bread as a thank you or welcome or feel better. Or whatever. I know that you can't buy love, but baked goods sure seems to do the trick.

Sorry for the confusion on the butter and honey amounts... I should have posted the entire recipe directions. Hope you all enjoy it!

How did the actual bread turn out? Was it dense and chewy or light? I am looking for a good whole wheat bread recipe. I would love to find a recipe that mimics "Great Harvest Honey Whole Wheat Bread"
