Fluctuating Humidity

Hi!
So I have only had my eggs set for 2 days so far. I live in QLD Aus where it's winter at the moment so it's fairly dry. My issue is that my incubator is fluctuating between mid 40% up to mid 60%. I currently have some rice in there for when it gets too high and may crack open the box which will reduce the humidity. The issue is that I can't get it to even out around 50-55%, it's either in the 60's or 40's. I have no problem with the temp.. it's just the humidity.

I would love a good hatch rate for my first shot at incubating!!

What incubator are you using? What type of eggs are you hatching? What does it run dry, without any water in there? And have you calibrated your hygrometer for accuracy?
