Unless you are selling over a certain number of dozen a week, you don't have to worry with cartons too much. Try contacting one of the folks listed in the first link and see what the number of dozen is. I can't remember what it is.

If you are selling eggs under a state permit and are using used cartons you are usually required to use clean cartons and mark out all inapplicable info.

If you are selling eggs under state rules that don't require a permit, e.g., direct sales on your premises, then you can generally do whatever you want.
