OK we all know fresh eggs dont peel easily and I have tried a lot of different ways including many listed here. Most made it a little easier but the eggs still came out looking like a cellutite thigh. Sorry but it true right?
SO last night I tried something different. I boiled 4 fresh out of the barn eggs. No salt no nothing, Just water and eggs. After about 7 miuntes, I put on heavy leather gloves and tooke the covered pot to the sink. I shook it good to crack the shells up. Then ran them under cold water in the pot for a minute or so. I (with out the gloves now), pealed the big end just enough to expose the membrane under the shell. I took off a pinch of that membrane. I left them in cold water and set the whole pot in the fridge over night. This AM I peeled them for lunch at work. Still not SUPER easy to peal but no dimples or tearing. Perfect shaped eggs. REALLY! My theory is that tearing that membrane while the egg is still warm, allows water to get sucked in under it as the egg cools and that allows it to seperate form the egg whites easier. All I know is that it worked and I will do it again tonight. Only draw back is that you have to plan ahead a bit and have the fridge space.
