I brought in the last two boxes of canning jars I inherited from Igor’s grandparents and ran them through the dishwasher; they all turned out to be quarts. The thermal cooker is on the shelf under the grow lights with another pan of boiling water; will test the temperature after eight hours. We’re supposed to be in the low 80’s today so test conditions are about comparable to what they’ll be in summer with the a/c. I ended up dumping the ginger vinegar. I don’t think there necessarily anything wrong with it because it was sour, but I didn’t care for the smell or taste. Other vinegars are still bubbly. My first sourdough starter I didn’t see rise and fall but I fed it again today anyway.
 
How does it taste IM? Is it much different from the commercially prepared?
I put it in the fridge. We are having baked potatoes for lunch so I will try it then. I thought about tasting it but warm sour cream isn’t particularly appealing in my mind.
 
I am pooped. We went grocery shopping, put the cold stuff away and went to the park. The dogs are napping, the birds are having a head of romaine lettuce, and I’m procrastinating about making the deviled eggs. Igor is making us a sandwich for lunch so potatoes will be for dinner instead; the kitchen is still a disaster. I picked up a car windshield thing on clearance at walmart so I can line the inside of the thermal cooker to improve efficiency. I’m thinking we’ll have our first meal from it next week. We had leftover fresh dill so I’m fermenting some pickles

@N F C I had some sour cream on my enchiladas tonight. It’s quite thick and not quite as tangy as store bought. Delicious though, I can see making it instead of buying it.

Sounds like a successful experiment to me :thumbsup That would be handy to be able to make your own instead of buying it at the store.

I stirred it and tasted it again this morning. A little tangy like store bought, nice and thick. Our daughter really likes it too, so I think we will just make our own from now on. So easy and I have the ingredients on hand all the time.
